As a vegetarian comfort food blog, I’ve got tons and tons of options for meatless meals, but today I’m choosing 11 of my favorites to share with you all in one. These are perfect recipes to serve to meat-eaters who you’re trying to convince they don’t need meat with eeeevery meal.
I’ve included a variety of classic comfort food meals…you’ve got your mac and cheese, your chili, your grilled cheese, pasta, curry, pot pies… and so on! I really hope you find something you love.
I did some research on Meatless Mondays before putting this together. I found out the official Meatless Monday non-profit initiative got its start all the way back in 2003. Ahhh, I was in junior high at the time. Shudder.
Their goal is pretty reasonable if you ask me: “to reduce meat consumption by 15% for our personal health and the health of the planet.”
Every Monday of my life for the past seven years or so since I became a vegetarian has been a Meatless Monday. But I know a lot of people are just starting to dabble in this concept. And I want to make it easy for you!
Why comfort food meatless meals?
I’m a firm believer that just because you’re vegetarian or vegan doesn’t mean you ONLY want to eat vegetables. You want cheesy, carby, comforting foods that satisfy your cravings. I’ve included a mix of some vegan comfort foods, as well as plenty of vegetarian options if you eat eggs, cheese, etc.
