Theeee most festive muffin I ever did seeee!!!! These are great Christmas muffins to keep on hand for unexpected visitors or for Christmas brunch.
They are perfectly crisp on top and sooo soft on the inside and the cranberry and white chocolate is a deadly (good) combo. I just had to share the recipe with you guys so you can try them for yourselves!
Ingredients:
- 4 tablespoons softened butter
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 cup milk or cream
- 1 egg
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon (or to taste)
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 cup cranberries (well, technically Craisins)
- ¾ or 1 cup white chocolate chips
Preheat oven to 400 degrees and pop 12 muffin liners into a muffin pan or grease the pan instead.
Beat the butter and sugar until they get nice and creamy. Then, add the vanilla, milk or cream, and vanilla and beat it a little more. Then add the flour, baking powder, cinnamon, salt and mix - but don't over mix, it's okay if it's a bit lumpy. Now fold in the cranberries and white chocolate chips. Fill the 12 muffin tins and bake for 17-19 minutes until you can poke a toothpick in the middle of a muffin and it comes out clean.
Let them cool for a few minutes in the pan, then move to a cookie rack to cool for a few more minutes before you store them.
