Creamy Dreamy Garlic Penne

October 7, 2018 by Chelsea Kram – XO&So: Vegetarian Comfort Food Leave a Comment

This creamy garlic pasta recipe is a go-to because it’s so easy to make, doesn’t take long, and doesn’t require a ton of ingredients.

creamy garlic pasta

There are certain foods that I’ll ALWAYS feel like eating, and they include mashed potatoes, grilled cheese, and creamy garlic pasta.

Like many of my recipes, you can be flexible with a lot of these ingredient amounts. I don’t put specific salt/pepper/parsley measurements because those are pretty easy to figure out to make the dish to your liking. The onion powder is totally optional, but I’ve made this dish with and without, and I liked the extra flavor it added. I’ve also made this recipe using fresh garlic, as well as prepared (i.e. a jar of minced garlic) and didn’t notice a difference! Adding the Parmesan is also optional, but if you ask me, the cheesier the better so Parmesan never hurts!

I really like measuring out all my ingredients ahead of time so I can easily add things as I go - I also find this makes less of a mess!

Creamy Garlic Pasta

This creamy and dreamy garlic pasta can be on your table within 20 minutes, and it only requires a handful of ingredients! It's very similar to homemade Alfredo, but with less cheese and even more flavor. You really can't go wrong when it comes to creamy pasta, can you?

This recipe will make two bowls of pasta, but if you and your dining partner want seconds, double up!

prep time: 3 mins cook time: 12 minstotal time: 15 mins

ingredients:

1 and ¼ cup penne, uncooked
3 tbsp. butter (⅓ of a stick)
2 tbsp. flour
⅔ cup whole milk (usually called homogenized milk in Canada)
4 garlic cloves, minced (or 2 tsp. of prepared garlic)
½ tsp. onion powder
Salt and pepper
¼ cup of shredded Parmesan for topping
Fresh or dried parsley for garnish

instructions

Cook penne according to directions.
Melt the butter in a saucepan on medium heat, then add garlic and cook for 1-2 minutes until simmering.
Whisking constantly, add the flour and onion powder.
Once the flour/butter/garlic is mixed, slowly pour the milk in, whisking slowly as you go.
Bring the mixture to a simmer (this will only take a few minutes), stirring as you go so the sauce doesn't get clumpy.
Once your pasta is cooked, mix it with the sauce and add salt and pepper.
Next, serve two bowls of pasta, and top each one with fresh parsley and about a ¼ cup of Parmesan.

Handy Products:

I LOVE these little latte bowls from Anthropologie. The one you see in this post is in the color “Mimosa Bloom.” They are so handy for so many things in the kitchen! I have the full size too, and they’re equally awesome. I LOVE these little latte bowls from Anthropologie.
