Homemade Almond Granola

There’s a lot to love about homemade almond granola. Not only does it make your house smell like a dream come true, but it has way less sugar than store-bought granola and you usually have all of the ingredients you’ll need for it right in your pantry.

You can eat it on its own by the handful, or add this homemade almond granola to yogurt or ice cream, and it’ll keep for at least a week in a sealed dish! You can also add plenty of things to it like raisins, a variety of nuts, coconut, etc., etc.

Crunchy Almond Granola

This almond granola is hard not to eat by the handful (but you can also add it to oats, yogurt, or ice cream! It's ultra-satisfying, easy to make, and your home will smell SO GOOD while it bakes!

prep time: 5 mins cook time: 45 mins total time: 50 mins

ingredients:

2.5 cups old fashioned rolled oats
¾ cup slivered almonds
½ tsp. cinnamon
⅛ tsp. salt
½ cup maple syrup
¼ cup melted coconut oil
½ tsp. almond extract*
1 tbsp. vanilla extract

instructions

Preheat your oven to 300 F
Melt coconut oil in the microwave until it has a liquid consistency (I highly recommend this OXO silicon measuring cup for melting coconut oil, chocolate, etc. for baking. I love mine!)
Mix all ingredients in a large bowl with a wooden spoon until everything is blended and all oats are covered
Cover a large baking sheet with tin foil
Pour the oat mixture on the tin foil and spread out (don't worry about clumps, it's okay if they group together but make it relatively flat)
Bake for 45 minutes total, stirring well every 15 minutes
Once finished, let the granola come to room temperature before storing it in an air-tight container

NOTES:

*Almond extract is a lot stronger than vanilla extract,  but you can use more if you want a more intense almond flavor
