My Favorite Classic Pancake Recipe of All Time

October 21, 2018 by Chelsea Kram – XO&So: Vegetarian Comfort Food 1 Comment

classic pancakes

This is my favorite classic pancake recipe! I’ve perfected it over the years to get it just right. These are amazing all on their own. But they’re also an excellent base if you want to add berries or chocolate chips, etc. Breakfast food is just the best. You can eat it any time of day and these are no exception.

There are so many ways to make a great pancake, and so many different ingredient options so you’ll never get sick of eating them.

Some people like pumpkin chocolate chip pancakes, others go for blueberry banana pancakes, and I’ve even seen eggnog pancakes (which I’m eager to try!).

But sometimes you just need to take it back to basics and have a good ol’ stack of classic pancakes. That's where my favorite pancakes come in.

I’m heading up to Kananaskis for a spa day and a night at the Pomeroy hotel today, but I had to get this recipe up before I left so you could try them out this week!

Make sure you don’t over-mix your batter when you make these pancakes - it’s okay for it to have a lumpy consistency! You’ll end up with perfect pancakes that’ll keep you coming back for more. This recipe makes about 10 pancakes and I’ll be VERY proud of you if you eat all ten in one sitting by yourself.

My Favorite Classic Pancake Recipe

This is my favorite pancake recipe I’ve perfected over the years to get just right. These are amazing on their own, but they’re also an excellent base if you want to add berries or chocolate chips, etc.

prep time: 5 mins cook time: 10 mins total time: 15 mins

ingredients:

1 egg
½ cup milk
½ cup cream
2 tbsp. melted butter
1 cup flour
2 tsp. baking powder
2 tbsp. sugar
Pinch of salt
1 tsp. vanilla extract

instructions:

Melt butter in the microwave
Whisk egg in a large bowl, then add milk, cream, vanilla, sugar, and melted butter and stir.
Now add dry ingredients, and stir.
Don't over-mix the pancake mix- it's okay if there are some lumps left in the batter.
Coat a non-stick pan generously with cooking spray or additional butter.
Use 2-3 tbsp. of batter for each pancake.
Next, turn your stove top to medium high heat. Then, once the pan is hot, cook three pancakes at a time. Flip them once they begin to bubble on top and are light golden.
Serve with butter, syrup, jam, or whatever else you like on your pancakes!

Hope you love my favorite classic pancake recipe as much as I do!
