A lot of us are home-bound right now as the world deals with everything going on. Many of us have also been stocking up on canned goods (and apparently a LOT of toilet paper?!) due to the uncertain times ahead. I have several recipes that include canned vegetables or other canned foods, so I thought I'd compile them for you today in case you're on the lookout for canned food recipes during this time.

Now is the perfect time to cook at home, whether that's a new concept to you or not!

These canned food recipes don't rely solely on canned goods, but they each use at least one can of something or another of those pantry staples many people have on hand.

CHEESY BEAN & LENTIL VEGETARIAN CASSEROLE

Craving healthy vegetarian comfort food? This easy cheesy bean & lentil vegetarian casserole is packed with plant protein & so much delicious flavor. It also uses some of the most nutritious canned foods, including lentils and beans so you can put your pantry staples to good use, nourishing you and comforting you all at once!

MOZZARELLA STICK GRILLED CHEESE SANDWICH

Bet you didn't think a grilled cheese sandwich would fall under the canned food recipes category, did ya?

Got a can of marinara sauce on the shelf but you're craving something other than pasta? Give my mozzarella stick grilled cheese sandwich a try! This grilled cheese sandwich has mozzarella sticks placed between two pieces of bread fried in parsley butter, complete with marinara sauce & even MORE cheese.

SMOKY & SPICY BAKED CREAM CHEESE DIP

If you've got a jar of jalapenos on the shelf, now's the perfect time to pull it out and make this smoky and spicy baked cream cheese dip. This dip takes less than 10 minutes to prep for the oven. Get ready to enjoy the cheesy, smoky, and spicy appetizer of your dreams! You can also substitute fresh tomatoes for canned tomatoes to use up even more canned goods.

MY FAMOUS ONE-POT RED LENTIL COCONUT CURRY RECIPE

My vegan red lentil coconut curry has become "famous" over the past six years I've been making it. It's ultra comforting, satisfying, and SO good! It uses canned coconut milk and canned tomatoes. It's a one-pot recipe that makes excellent leftovers, too!

EGG CASSEROLE WITH COTTAGE CHEESE AND ROASTED RED PEPPER

I feel like  a jar of roasted red peppers can be found in almost every pantry if you look hard enough! I always seem to have another around somewhere. Why not use them up?! This easy breakfast casserole is made with eggs, cottage cheese, canned roasted red peppers, and other yummy ingredients that your whole family will love!

THE BEST EVER VEGETARIAN CHILI — SERIOUSLY!
