
I'm always on the search for the next dip or fry sauce recipe to fall in love with.
Anyone who's ever dined with me knows how quickly I can go through a side of dip at a restaurant...I usually request at LEAST one extra right off the bat. I think those tiny ramekins are insulting. Give me a BOWL of dip if you really want me to be a happy customer! Ha.
The dipping sauce is my favorite part of most dip-able foods!
So, please trust that I won't lead you astray with this asiago balsamic aioli sauce recipe. It's the perfect dipping sauce for fries, but it goes SO well with so many things...including as a sandwich spread!!!
The balsamic vinegar and minced garlic adds just the right amount of tang. The mayo makes an excellent base. The asiago adds more flavor and texture, and finally, a touch of black pepper is the cherry on top.

What is aioli sauce?
I read on Food Republic that aioli "hails from the southern French region of Provence, and begins not in a blender but with a mortar and pestle and several cloves of garlic. When the garlic is pounded to a paste, it's whisked into the traditional preparation of egg yolk, lemon juice, mustard and olive oil instead of canola (which adds olive oil's fruity aroma into the mix)."
Now for aioli vs. mayo.
Mayonnaise is an emulsion of oil, egg yolk, and an acid, and then either vinegar or lemon juice.
Soooo, if you add garlic to mayonnaise, you get garlic aioli, right?!
Technically, since we're used mayonnaise that's already made, we're skipping the step of emulsifying the egg yolk, etc. We get the same result with a lot less work!
There are plenty of mayo-based sauce recipes out there. But none quite like this. I think this combination of flavors is going to absolutely delight you.

You're also going to love how few ingredients you need to create this sauce recipe.
All it takes is:
- Mayonnaise (I use Hellman's)
- Balsamic vinegar
- Ground black pepper
- Asiago cheese
- Minced garlic
How to make aioli with these ingredients
This section is going to be really simple.
Combine all of your ingredients in a bowl. Mix well. Refrigerate for at least an hour. Serve! Yep, it's that straightforward.
I love that you can get something so flavorful and satisfying with hardly any work or time and just 5 ingredients. Magic!
What to eat with aioli sauce
If you ask me, I'd say, if you can eat it, it can be eaten with a dip!
But here are just a few examples of what to eat with aioli if you need some inspiration:
- French fries or sweet potato fries
- Vegetables
- Bread and crackers
- Tofu
- Chip dip
- Chicken(less) tenders (I love Gardein 7-Grain Crispy Tenders!)
- Spread on a sandwich or a burger

Asiago Balsamic Aioli Sauce
Ingredients
- ½ cup mayonnaise
- ¼ cup asiago cheese grated
- ½ teaspoon garlic minced
- 2 teaspoon balsamic vinegar feel free to experiment with the balsamic and start with even 1 tsp. and increase until you get your desired flavor
- ¼ teaspoon ground black pepper or more to taste, but start with this much
Instructions
- Combine all ingredients in a bowl, let it sit in the fridge for at least an hour.Serve and enjoy!
