Gourmet grilled cheese with Brie, apple, and raspberry
It seems like just yesterday I was wrapping up a year of unique mac and cheese recipes after 2019's "Mac of the Month" collection. Now, here we are at the end of 2020 and I'm wrapping up 12 grilled cheeses of the month with this gourmet grilled cheese I just can't get enough of.
I've been on a Brie kick throughout the holidays. So, making a grilled cheese with Brie felt like an obvious choice!
This raspberry, Brie, and apple grilled cheese sandwich is that combination of sweet and savory that you just can't beat. It doesn't need ketchup or soup or anything else for dipping, because it stands out on its own. And the pinch of thyme in the butter is the cherry on top!
Gourmet grilled cheese ingredients
Here's what you'll need:
- Big, thick slices of fresh sourdough bread
- A wheel of Brie cheese, cut into slices (I keep the rind on because it's way easier to cut)
- Raspberry jam (mine has seeds but seedless is fine too)
- Honeycrisp or gala apple cut into thin slices
- Butter, melted in the microwave
- A pinch of dried or fresh thyme
Instructions
- Melt your butter in a microwave-safe dish with a pinch of dried or fresh thyme.
- Spread or brush the melted butter on one side of each slide of bread.
- Spread the raspberry jam on the other halves, then top with shredded apple slices and sliced Brie.
- Top with the other bread slices, buttered side out.
- Heat a large non-stick pan on medium heat. Add the sandwiches, butter side down, and let cook on each side for about 3-5 minutes before flipping, or until bread is crispy and golden.
- If your Brie isn't melting enough, you can cover the pan!
- Cut in half, serve hot, and enjoy!

- 5-6 oz Brie, cut into slices removing the rind is optional, I leave it on

- Cut in half, serve hot, and enjoy!
