Broccoli cheddar is one of those timeless combinations you just can't beat. Packaged in a crispy oven baked quesadilla, it's even better! These vegetarian quesadillas have only a handful of ingredients, but they're packed with flavor and texture. Not to mention, they're ready in under half an hour! Crispy Oven Baked Broccoli Cheddar Quesadillas
I'd say with the red onion and red pepper flakes, this makes a grown up version of a meal kids love.
That being said, if your little ones are up for those ingredients, I think they'll love these too. They also make great leftovers even though they don't stay as crispy once they're refrigerated.
Anytime I have broccoli I need to use up or bits of cheese left, this is a go-to recipe.
Tips
I want you to love these broccoli cheddar quesadillas as much as I do, so please give these tips a quick read before you make them:
- SHRED YOUR OWN CHEESE! Do not use bagged cheese, it doesn't melt the same.
- Be sure to brush your baking sheet and your tortillas with a very light layer of olive oil. If you skip this, your quesadillas won't be crispy.
- I use 10-inch tortillas, but you could also use smaller ones.
- Feel free to play around with the ingredients. Add more or less cheese, more red pepper flakes for a bigger kick, more crunchy red onion...make them your own!
- Don't forget the sauce! I practically don't eat anything without some kind of dip or sauce. For these, I usually use a mix of chipotle hot sauce (this is my fave) and sour cream. Ranch is good too!

You can cut these into smaller pieces and offer them as an appetizer or a main course. Salad or fries go great on the side, or dipping them in soup is especially good.
But even on their own, these broccoli cheddar quesadillas are a stand out.

Crispy Oven Baked Broccoli Cheddar Quesadillas
Ingredients
- 3 large tortillas
- 3 cups cheddar cheese shredded from the block, do not use pre-shredded cheese
- 2 cups broccoli florets cut into small bits, similar to ground beef texture
- ½ cup red onion finely diced, use more or less to taste
- red pepper flakes a pinch
- salt and pepper
- olive oil
Instructions
- Preheat your oven to 400˚F. Brush a large baking sheet with a light layer of olive oil (don't skip this or your quesadillas won't be crispy).
- Heat a large pan on medium heat. Add a splash of olive oil and let it heat for about a minute. Add the chopped broccoli and diced onion. Add a pinch of red pepper flakes. Add salt and pepper to taste. Stirring occasionally, cook for 5-7 minutes until the broccoli is bright green and the onions have softened.
- Add half a cup of cheese to one side of each tortilla. Top with a third of the cooked broccoli mixture. Top with another half a cup of cheese.Close the quesadilla and brush the top with olive oil. Repeat with all three tortillas.
- Bake for 8 minutes. Carefully flip and bake for another 8 minutes until quesadillas are crispy and the cheese is melty.
- Serve with sour cream and hot sauce (my favorite!) or any dip you'd like.
