Pumpkin Spice Sliced Baked Apples

pumpkin spice baked apples in a white dishYour favorite fall flavors come together beautifully in these pumpkin spice baked apples! It's the perfect easy dessert that can be on your table in about 45 minutes, and it works great with ice cream, granola, or just on its own.

I'm not someone who anxiously awaits fall because to me, fall means the end of summer and I LOVE summer. But as I get older, I start to appreciate the season more...or the food associated with the season at least.

To me, fall food is warm comfort food.

Casseroles, spices, pasta...anything that fills up your belly and your heart!

And these pumpkin spice baked apples check off SO many boxes. Not to mention, they're incredibly easy to make and you don't need a million ingredients to pull them together.

This is a great easy dessert recipe partly because of its versatility. Sure, it's delicious. But it's also something that can be paired with so many things and works for a bunch of different diets.

Is this a vegan dessert?

If you use vegan butter, it's a vegan dessert!

You can serve it with things like vegan or dairy ice cream, vegan or dairy yogurt, vegan or dairy whipped cream, or granola. That way, everyone gets something that works for them! 

Ingredients

  • Apples (I use a mix of gala and honey crisp)
  • Brown sugar
  • White sugar
  • Butter
  • Pumpkin pie spice
  • Salt
  • Cornstarch
  • Vanilla extract
  • Lemon juice

How to make baked apples with pumpkin spice

Begin by preheating your oven to 350F. Set out an 8x8 or another 2 quart baking dish and a large bowl.

In the large bowl, you'll add the brown sugar, white sugar, pumpkin pie spice, salt, cornstarch, vanilla extract, and lemon juice. Mix it all together and set aside.

Next, peel and core your apples. (And yes – they are much better when they're peeled. It's worth the extra step!)

Cut your apples into about 16 slices each, so each slice is about ¼ to ½ an inch. 

Now add the apples to the bowl with the sugar mixture. Stir very well so every piece gets coated. I like using my hands for this part. 

Next, pour the apples into the baking dish. Cut or break your cold butter into small pieces and place them around the apples. 

Bake them for 15 minutes, and remove from the oven and stir well. Return to the oven and bake for another 15 minutes. Go ahead and stick a fork in one of the pieces first to see if its as soft as you'd like it.

When they're ready, stir again very well before serving (the sauce all settles at the bottom). 

Serve hot, and scoop some of the sauce from the bottom on top of the apples.

Pumpkin Spice Sliced Baked Apples

These pumpkin spice baked apples will satisfy all of your fall dessert cravings! They're super easy to make and SO delicious. Serve them with ice cream, whipped cream, yogurt, granola, or on their own.

Ingredients
  

  • 6 apples I use honey crisp and gala
  • ¼ cup white sugar
  • ¼ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 teaspoon pumpkin pie spice
  • ⅛ teaspoon salt
  • 1 tablespoon fresh squeezed lemon juice
  • 1 teaspoon cornstarch
  • ¼ cup butter cut into small pieces

Instructions

    Serve hot, and scoop some of the sauce from the bottom on top of the apples. 
    They're great on their own, but you can also top them with ice cream, yogurt, whipped cream, or granola.

Notes

*They are much better when they're peeled. It's worth the extra step!
**Baking time can depend on the thickness of your apple slices along with personal preference.
