This vegetarian summer sandwich with halloumi, cucumber, and tzatziki is the perfect, easy dinner on hot nights! And did I mention it’s ready in under ten minutes and you only need a handful of ingredients?
Your New Favorite Summer Sandwich
We’re in the middle of a BIG heat wave here in Calgary. As much as I like to cook a big batch of soup or curry on Sunday nights, it’s simply too hot! But a summer sandwich is perfect for these days. You want something filling but you don’t want to stand over a hot stove for hours on end. Enter: this sandwich!
The cucumber and tzatziki give it that fresh summery feel (and some crunch!) Then, the halloumi gives it a chewier, saltier, almost meat-like filling! Add several generous grinds of fresh black pepper and some very fresh bread, and you’ve got the perfect sandwich!
I’m keeping this summer sandwich recipe as easy peasy as possible! I’m going to tell you how to make it, but you don’t even need ingredient quantities. You can eyeball everything as you go. After all, when it comes to sandwiches, the ingredient amounts really depend on how big your bread slices are. We’re also using store-bought tzatziki to make things even easier…basically, I’m trying not to leave you with any excuses for not trying this sandwich for yourself.
This is all you need:
- Fresh white bread
- Halloumi cheese
- Thin cucumber slices
- Black pepper
- A tiny bit of olive oil to brush on the halloumi before frying
- Halloumi is VERY salty on its own. This recipe calls for lots of black pepper, but you’ll see I don’t suggest adding any salt…that’s on purpose!
- Pretty much any tzatziki sauce you love will work for this recipe. I buy the Opa brand or a greek yogurt tzatziki from Superstore and they’re both great
- For the photos in this recipe, I use big slices of fresh sourdough bread. But you can use any bread you like as long as its fresh!
- Toasting is optional if you want some extra crunch to your sandwich. You can also pop it in a panini maker or grill it!
- If you’re vegetarian, be sure to look for halloumi cheese made from non-animal derived rennet
Vegetarian Summer Sandwich with Halloumi, Cucumber, and Tzatziki
- 2 slices white bread thick and fresh is best!
- cucumber, thinly sliced
- tzatziki sauce at least 2 tbsp per sandwich, more depending on the size of your bread
- halloumi cheese cut into thick slices, about 3/8-inch each
- freshly ground black pepper
- olive oil just a tiny bit
- Heat a nonstick frying pan on high heat. Cut your halloumi cheese into 3/8-inch slices and gently blot dry with a paper towel. Brush each piece very lightly with olive oil.Place each slice of halloumi in the pan once it's hot. Fry for 1-2 minutes per side, until golden brown and cooked to your liking. Add several grinds of black pepper.
- Take two slices of thick, fresh white bread. (Toast them if you want some extra crunch!) Spread one slice with a generous helping of tzatziki sauce. Top with several thin slices of cucumber.
- Add more black pepper. Top with the fried halloumi cheese. Close the sandwich, cut it in half, and enjoy!
