Pumpkin Spice Sliced Baked Apples
These pumpkin spice baked apples will satisfy all of your fall dessert cravings! They're super easy to make and SO delicious. Serve them with ice cream, whipped cream, yogurt, granola, or on their own.
- 6 apples I use honey crisp and gala
- ¼ cup white sugar
- ¼ cup packed brown sugar
- 1 teaspoon vanilla extract
- 3 teaspoon pumpkin pie spice
- ⅛ teaspoon salt
- 1 tablespoon fresh squeezed lemon juice
- 1 teaspoon cornstarch
- ¼ cup butter cut into small pieces
Preheat your oven to 350F. In a large bowl, add the brown sugar, white sugar, pumpkin pie spice, salt, cornstarch, vanilla extract, and lemon juice. Mix it all together and set aside.Peel and core your apples.* Cut your apples into about 16 slices each, so each slice is about ¼ to ½ an inch. Add the apples to the bowl with the sugar mixture. Stir very well so every piece gets coated. Pour the apples into an 8x8 or 2-quart baking dish. Cut or break your cold butter into small pieces and place them around the apples. Bake the apples for 15 minutes. Remove from the oven and stir well (keep the oven on!). Return to the oven and bake for another 15 minutes. Stick a fork in one of the pieces first to see if its as soft as you'd like it. If not, bake longer.** When they're ready, stir again very well before serving (the sauce all settles at the bottom). Serve hot, and scoop some of the sauce from the bottom on top of the apples. They're great on their own, but you can also top them with ice cream, yogurt, whipped cream, or granola.
*They are much better when they're peeled. It's worth the extra step!
**Baking time can depend on the thickness of your apple slices along with personal preference.
