The perfect easy weeknight dinner! Use up that leftover broccoli and any bits of cheese you have and create these crispy oven baked quesadillas in under half an hour.
3cupscheddar cheeseshredded from the block, do not use pre-shredded cheese
2cupsbroccoli floretscut into small bits, similar to ground beef texture
½cupred onionfinely diced, use more or less to taste
red pepper flakesa pinch
salt and pepper
olive oil
Instructions
Preheat your oven to 400˚F. Brush a large baking sheet with a light layer of olive oil (don't skip this or your quesadillas won't be crispy).
Heat a large pan on medium heat. Add a splash of olive oil and let it heat for about a minute. Add the chopped broccoli and diced onion. Add a pinch of red pepper flakes. Add salt and pepper to taste. Stirring occasionally, cook for 5-7 minutes until the broccoli is bright green and the onions have softened.
Add half a cup of cheese to one side of each tortilla. Top with a third of the cooked broccoli mixture. Top with another half a cup of cheese.Close the quesadilla and brush the top with olive oil. Repeat with all three tortillas.
Bake for 8 minutes. Carefully flip and bake for another 8 minutes until quesadillas are crispy and the cheese is melty.
Serve with sour cream and hot sauce (my favorite!) or any dip you'd like.
