- 1 sheet puff pastry thawed but still cool to the touch
- 1 egg for brushing the puff pastry
- 1 package Garlic and Fine Herbs Boursin Cheese (150 g)
Red Onion Jam (½ cup)
- 1 lb red onions sliced, about two or three red onions
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 2 tablespoon brown sugar
- ½ cup dry red wine
- 2 teaspoon chopped fresh thyme
- pinch cinnamon
- salt and pepper
For the Boursin in Puff Pastry
Preheat oven to 400ºF.
On a large baking sheet, unroll one sheet of thawed puff pastry (make sure it's still cool to the touch). Place the Boursin cheese in the middle.
Top with the red onion jam (make sure you've let it cool down enough)
Wrap the puff pastry around the Boursin cheese and red onion jam, trying to seal any cracks.
Whisk one egg in a bowl, and brush the egg wash over the puff pastry.
Bake for 25 minutes, or until the puff pastry is golden
Important Notes:
Be sure to let the onion jam cool before using it—otherwise the puff pastry will get too soft/warm before you start baking it.
Serve with crackers, apple slices, nuts, or on its own.
Make sure the puff pastry is thawed enough to unroll but still cool to the touch.
